72 HOUR COLD PROOFING
While 72 hours may seem like a long wait, amazing pizzas come to those who do. It's as simple as covering the dough and placing it in the refrigerator 72 hours before pizza making begins. Why do we recommend this? During these 3 days a lot is happening as our yeast continues to ferment releasing gasses from the dough giving us our signature light and airy texture.
